Are you ready for the easiest recipe ever?! I shared a version similar to this last year, my caramel overnight chia oats – I have quite a few variations if you search “chia” on my site in the search bar (on the right). They’re basically the quickest sweet snack that’s incredibly filling and energy-packed.
I love to prep a couple jars on a Sunday night and have them ready for easy grabbing throughout the following week for breakfast or snack time. Sometimes you just need a few things made ahead to keep the stress of the week at bay. I find chia pudding to be a powerhouse combo that not only curbs my sweet tooth but keeps my energy consistent while I work. I also stay full much longer since chia seeds are so high in fiber. Win-win, right?
Definitely give it a try, play around with different fruit combos and/or flavorings. I love making a pb cup chia pudding where half the chia seeds are soaked with carob powder and the other half with powdered peanut butter. It’s the perfect guilt-free treat!
- Measure and mix everything together till evenly combined.
- Leave overnight in the fridge covered. I recommend checking on it about 20 minutes after mixing to give it a good mix again so the chia seeds don’t settle at the bottom.
- Remove chia pudding from the fridge and layer with fresh fruit.
- Top with your favorite toppings and enjoy chilled.
