Sorry for being MIA lately, it was my birthday yesterday and this past week has been busy for me. But I’m back now! So you don’t have to be sad anymore 🙂 Today’s recipe is a delicious tahini dressing/sauce I’m absolutely in love with! I put it on salads, wraps, I use it as a dip for veggies and it’s even used on my garbanzo bean veggie omelets – totally killer!
(Yields about 1 1/2 cups)
1 cup Sesame Seeds, toasted
1/4 cup Olive Oil
2 Meyer Lemons, juiced
1/4-1/2 cup Water, depending on desired consistency
1-2 Garlic Clove(s)
1/2 tbsp Lemon Zest, optional
1-2 tbsp Onion, minced
Pinch of Salt & Pepper
Over low heat, lightly toast your sesame seeds for 5-10 minutes. Set them aside to cool.
Combine everything and blend till smooth, roughly 2-3 minutes. Adding water till desired consistency is reached.
Store in an air tight container in the fridge. Will keep for up to 2-3 weeks.
