My beloved oatmeal recipe. This is so easy to put together and modify to your personal likings. I’ve also done a peach version using this base and it was incredibly delicious. If you try it out, let me know what you think!
Spiced Blueberry Baked Oatmeal
(Yields 3 small servings)
1 cup Rolled Oats
3/4 cup Raw Almond Milk, tutorial here
1 Banana, mashed
1/4 cup Blueberries
1/8 cup Pecans, roughly chopped
1/8 cup Golden Berries
2 tbsp Coconut Palm Sugar
1 tbsp Mesquite Powder
1/2 tbsp Maca Powder
1/4 tsp Vanilla Bean Powder
1/4 tsp Cinnamon
Topped with extra Blueberries, Pecans & Maple Syrup
Preheat your oven to 350 degrees F.
In a medium-sized bowl, measure and combine all your dry ingredients (oats, sugar, powders) whisk till evenly distributed.
In a small bowl, mash one ripe banana and whisk it together with your almond milk.
Pour the wet mixture into the dry and stir till combined.
Fold in your pecans and blueberries, avoiding a heavy hand so the mixture doesn’t turn blue.
Evenly pour into 3 small ramekins and place them on a small baking sheet.
Bake for 20-25 minutes till the tops are golden brown and the blueberries start to plump up.
Serve warm with extra toppings and maple syrup for added sweetness, if desired.
