Who doesn’t love a little chocolate? Well I know I do and these hit the spot! I love making these and cutting them into small squares so I have a guilt-free treat anytime a sweet tooth decides to act up. If you love brownies, check these out and be sure to give them a go. Raw brownies are just as satisfying as the baked version, I promise!
Raw Fudgy Chocolate Brownies + Matcha Cashew Cream
(Yields 9 large or 16 small)
1 1/2 cups Raw Almonds
1 cup Medjool Dates, pitted & soaked overnight
1/2 cup Raw Cacao Powder
1/2 cup Hemp Seeds
1/4 cup Date water, from the dates soaked overnight (or raw almond milk)
1 tbsp Chia Seeds, ground
Shredded Coconut, optional
In a high-speed blender, pulse raw almonds till a corse/fine flour is made.
Add in the rest of your base ingredients and pulse till combined. It should be a thick batter.
Line a 9×9 brownie pan with unbleached parchment paper, spread out your brownie base evenly. Let these chill for an hour in the freezer.
Back to your high-speed blender, whirl together your matcha cream ingredients till smooth. About 1-2 minutes on high.
Grab your raw brownies and spread the matcha cream over the top, evenly. Top with shredded coconut, optional.
Chill for another 1-2 hours in the freezer.
Cut into 9 or 16 even slices and serve cold.
These will keep in the freezer for months, I recommend serving them frozen. They’ll start to melt after awhile at room temperature.
