Plant Strong Pancakes
(Yields 8 mini or 3 large)
1 cup Oat Flour, ground rolled oats
1 scoop Plant Fusion Protein Powder
1 Flax Egg, (1 tbsp Flax Meal + 3 tbsp Water)
1/2-3/4 cups Water, depending on consistency
1 tsp Apple Cider Vinegar
PB Maple Syrup
3 tbsp Maple Syrup
1/2-1 tbsp Peanut Butter
In a small bowl, combine 1 tbsp Flax Meal + 3 tbsp Water. Mix and let rest for 5 minutes.
In a medium bowl, whisk together your dry ingredients.
Slowly add in your wet ingredients (including flax egg), whisking till desired consistency.
Heat a large skillet pan to medium heat. Portion out batter in desired quantities. Batter should yield between 8 mini or 3 large pancakes.
Serve hot, top with maple syrup, agave nectar or fresh fruit.
