I don’t know about you, but I really, really love chips. More specifically, Chipotle’s chips! Now these aren’t that recipe, rather inspired by with a bit more citrus. Hope you try them out and enjoy!
Citrus Baked Tortilla Chips
4 large Tortillas (any flavor/type, I used regular and spinach)
1 tbsp Coconut Oil (melted)
1 Lime (zest & juice)
1 Lemon (zest)
1 1/2 tbsp Kosher Salt
1/2 tsp Smoked Paprika (or to taste)
Preheat your oven to 350 degrees F
In a small bowl combine oil, salt, paprika & the juice of 1 lime (about 1/8-1/4 cup)
Using a basting brush, lightly coat each tortilla (front & back)
Stack all your tortillas and cut into eighths or your preferred size
Line two baking sheets with your slices, making sure they don’t touch
Zest both the lemon and lime over your tortillas, as much as you want
Place in the oven for 12-14 minutes, switching racks half way through
You want them to be slightly dark, crispy but not burn or soggy
After they’ve baked, serve hot with your favorite salsa, guacamole or humus!
You can get creative with these and cut tortilla strips for dipping or use as a topper on soups/salads! Have fun and customize the favors to your desired taste!
