When I say chipotle lime, what I really mean is chipotle LIME haha I debated using caps on it in the title, but decided against it… but I really mean it. Lime is just the best! (if you haven’t been able to tell, I’m a bit of a citrus fanatic!).
Chipotle Lime Roasted Chickpeas
(Yields 15 oz.)
1 can (15 oz.) Garbanzo Beans/Chickpeas
Preheat your oven to 425 degrees F
Drain and rinse your chickpeas and on a lightly greased baking sheet, evenly spread them out
Squeeze one lime over the top, shaking them up to evenly coat
With a light hand, sprinkle your seasonings all over
Remember that less is more, but I LOVE them spicier so I use a heavy hand
Bake for about 15 minutes, shaking them up and adding more lime and a bit of salt
Bake for another 5-10 minutes
Serve hot, coated in more lime juice/zest!
