So I talked about making this on my post for the $25 meal plan challenge a couple of weeks back, you can find it here. I thought I’d do a formal post so you can go back to that plan and use this in place of dinners or in general make this and just love it – do as you please! It’s super simple and comes together fairly quickly.
Chickpea Tandoori w/ Miso Risotto
1 cup Risotto or Arborio (dried – can sub rice, quinoa, or any grain wanted)
3 cups Veggie Stock (or any broth – or water)
15 oz. Chickpeas
1 cup Tomato Soup (recipe here)
1/4 large Yellow Onion (in rings)
2 tbsp Coconut Milk (optional)
1/2 tsp Tandoori Spice
1/2 tsp Salt
1/4 tsp Garlic Powder
1/4 tsp Lemon Pepper
In a medium pot, cook your rice or risotto as instructed. For me, I used arborio and instead of water added in a cup of miso broth till it fully absorbed (x3 total). But you can make white/brown rice, anything will do. Even quinoa or couscous.
In a large sauce pan, combine your tomato sauce, chickpeas, seasonings and onion over a medium heat. I like cutting my onion into thin rings, but feel free to mince/dice/or completely omit it if you’re not a fan.
After 20 minutes on medium, drop the heat to a simmer and stir in your coconut milk or any non-dairy milk. This will make it a bit “creamier”.
As soon as your grain is fully cooked and sauce is thickened, about 30 minutes total, you’re ready to serve.
This is something you could honestly make in bulk in a crock pot and save the rest. Basically a little tandoori seasoning, onions and coconut milk is an instant Indian flavor that’s quick and easy to put together. Which is why I talk about investing in a nice variety of spices. You can change any dish and make receptive meals unique enough not to grow tired of.
