You wanna talk about a budget friendly meal? Well it doesn’t get any easier, cheaper or delicious than this! I can make this entire meal for under $4 bucks so if you got the ingredients all on sale and/or made it in bulk, you could save even more!
4 large Zucchini Squash
1/2 medium Yellow Onion
1 medium Tomato
10 White Mushrooms (optional)
8 oz. Tomato Sauce
1 tsp Garlic Powder
1/2 tsp Lemon Pepper (optional)
1 tsp Salt
1 tsp Dried Basil (optional, or 5 fresh basil leafs thinly sliced)
Pepper to taste
Heat a large skillet to medium heat
Prep all your veggies, cutting them into thick chunks
Throw everything into your pan and cook on medium for 20 minutes, or until zucchini is tender
Simmer for 4 minutes and serve
You can serve it over pasta to make this go even further! And you can add in your favorite pizza toppings (i.e. olives, peppers, meat). I love it on it’s own when I’m craving pizza but don’t want all the fat/calories. It’s totally guilt-free and delicious! Probably the easiest dish ever but I thought I’d share it anyways. I can eat this entire meal solo lol it’s just that good!
